Atol
1 cup of milk,1 teaspoon of cornmeal,1 stick of cinnamon,sugar
For one cup of milk, drop one teaspoon of cornmeal dissolved in a little bit of milk. Heat the milk with a stalk of cinnamon, turn the burner down and start adding more cornmeal little by little.Stir until it thickens. It’s better to add the sugar once the milk curdles. If you don’t want to make it that thick, then pour some more hot milk.

Atol de elote
2 ears of tender corn,2 bottles of milk,1 lb of sugar,a pinch of salt
Wash the loose grains of corn, grind them and blend the mixture with milk. Strain the whole thing using a thin piece of cloth, let them cook in slow burn and add salt and pepper. Stir constantly while cooking to prevent the mixture from getting sticky. It could be served either hot or cold.

The same recipe as for the cochune nuts in honey. The only difference lies in the fact that, in this case, the honey shouldn’t be that thick.
