Nances in catgut
As many pounds of nance as you wish and catgut liquor
Wash the nances pretty well. Make a honey in a clean bowl and add as much catgut as the amount of honey you make.The honey doesn’t have to be too thick and add the nances. A month later, the nances will be pretty rotten. Just remember the longer they stay in the bowl, the better.

Orange Sweet
6 lbs of orange paste,1 lb of sugar for every pound of orange paste
Grate only the orange skin into a bowl. Add a pinch of salt and let the whole thing take a slow burn. Wash the content to drain the sourness away. Cook the mixture in four cups of water and add more water in case it gets dried out. When it’s tender enough, add the sugar and a leave of fig. Keep stirring with a wooden spoon. It’s ready to go as you put your thumb and index finger into the mixture, grab a little bit of it and see a thread of sweet bridging both fingers as you open them apart.

Peaches in honey

Prepare the peaches, as many as you’d like. Avoid green ones. Wash and peel them by making three lengthwise slashes.Put them in a pot (never an aluminum one) with enough water to cover them, and add some sugar. As they cook, start pouring tads of sugar until they turn as sweet as they get. The pinkish honey mustn’t be too thick.
