Rolled sausage
Beef,Onion,Sweet pepper,Sour orange juice,Salt,Peppermint,Tomato
Boil the meat and season with onion, sweet pepper and tomatoes. Dice them well (never grind them) and mix with plentiful onion, sour orange juice and salt. Put peppermint and save the broth to make the soup.

Stone crab soup
2 dry coconuts,1 dozen of stone crabs,green bananas,cassava,salt,pepper,cumin,sweet pepper,tomatoes,onions,garlic,parsley or coriander
Peel the coconuts, grate the kernel and remove the milk. Cleanse the crabs. In a deep bowl, put one tablespoon of cooking oil or fat, onion, garlic and parsley alongside the rest of the diced condiments. Then add the vegetables well sliced into mouthfuls and the stone crabs. Stir well and pour the milk out of the two coconuts plus boiled water in case the amount of liquid is not good enough. Cook in slow burn for about 20 minutes and spice it up using salt and pepper.

Tamales
Ground cornmeal,Pork meat,Pork fat,Sliced onions,Garlic,Salt and pepper,Potatoes previously diced and cooked,Raisins,Olives,Cooked rice (optional),
Cook the corn the day before as if you were going to make tortillas, but just a tad overdone. Wash it and let it rest in water. Grind the corn in a treadmill and leave it a little bit soaked. Cook the dough with enough salt , melted pork fat and some sugar. Let it harden a little so that it can be stirred. ,Season the pork meat previously diced, combined with the onion, ripe sweet peppers, garlic (all ground) salt and pepper, cumin and spicy peppers. This must be cooked for the meat to get tender.For the stuffing, grind a little bit of corn, some toasted pumpkin seeds and water. Grind the onions, sweet pepper, garlic and some pork fat. Season and stir the dough with salt and pepper, and as much spicy pepper as you want to add. ,The banana leaves can be bought in the market and must be boiled until they get darkened. Remove the leaf veins and flatten the leaves. Put a spoonful of dough in the center of the leaf. The tamales are wrapped up using threads out of the dry banana stalk.
