Pork belly pupusas
Pork belly cracklings,Cornmeal
Grind the crackling with the onion and spicy pepper. Knead the cornmeal dough into tortillas. Put a portion of ground cracklings into the tortillas and cook them on both sides until it’s done.Cracklings can be replaced by beans or cheese. They can be served either on their own or accompanied by cabbage or prickled onions and peppers.

Quesadillas
1 lb of rice flour,1 lb of sugar,6 eggs,4 oz of butter,4 oz of cheese,4 oz of cooking fat,2 teaspoons of royal
Grind the cheese and the butter well. The stir the sugar and the egg yolks into the mixture and blend the whole thing with sifted flour and royal. When the dough is well kneaded, add the beaten egg whites and pour into greased and flour-sprinkled molds before putting into the oven.

Rice and milk tarts

Add a beaten egg, a tablespoon of butter or margarine and a pinch of sugar. The dough must be fried in spoonfuls, one at a time, in piping hot pork fat. Don’t let them brown too much . They must be served with meats. With dripping honey, it could also be served as a dessert.
