Espumillas
2 beaten egg whites,half a cup of sugar
Beat two egg whites to a foam. Start pouring half a cup of sifted sugar and keep on stirring.In a pot slightly greased or covered with waxed paper, drop spoonfuls of the beaten eggs and put in the oven at 200 degrees Celsius.Turn the oven off once they get brown, yet you should wait an hour before removing them. In order to gain more thickness, add a drop of lemon juice into each and every egg white.

Fish cover
1 coconut,2 green bananas,1 ripe banana,half a pound of cassava,2 lb of fish ,half a pound of sweet potatoes
Grate a coconut, drain the pieces into a pot and remove the milk. Add water until you make three cups. Cook in slow burn and add two small peppers, garlic, one onion (too much onion could make the coconut curdle), three coriander leaves, salt and pepper.Once it starts taking a slow burn, first add the sliced cassava. When the cassava is almost done, then add the green banana, the plantains and the ripe bananas. Add more water if it gets too dry and taste the seasoning. Finally, add the fish. Make sure the fish was properly boned. Put the lid on for about 15 minutes and serve hot.

Guts soup
3 lbs of guts, previously washed and diced,1 lb of pork legs,2 ripe plantains,2 big carrots,2 big potatoes,1 small cabbage,4 cloves,1 small pumpkin or gourd,2 tablespoons of soy sauce,1 stalk of coriander well sliced,1 teaspoon of spices,1 pepper,half an onion,3 cloves of garlic well ground
Cook the guts along the pork legs, salt, crushed pepper, onion, garlic until it gets tender. Add the vegetables (carrots, potatoes, cabbage) cut in thin slices. Keep cooking until the vegetables are done. Pour the cloves and spices. Finally, you add the ripe banana once the vegetable are tender. Once the banana is tender, turn the stove off and add the sliced coriander while the soup is still hot.
