Banana den Forno(Baked Bananas)
4 ripe bananas ,2 tbs cinnamon powder ,3 tbs vanilla extract ,1 cup sugar ,4 cups water
Peal the bananas and boil them together with the cinnamon, vanilla extract, sugar and water for about 20 minutes. , Bake the bananas in the oven at 275° for 10 minutes. Serve with favorite ice cream.

Beregein hasa
3 ripe eggplants ,1 1/3 Ibs. butter ,pepper and salt, Eggplant dish - beregein, 4-6 eggplants ,1 lb. tomatoes or 2 lbs. tomato paste ,3 small onions ,a tablespoon butter ,3 1/2 Tbs. flour ,salt ,pepper ,1/2 lbs ,chopped parsley ,1 lb. boiled potatoes
Wash but do not peel eggplants. Cut them lengthwise into slices and sprinkle with salt, pepper. Fry them in hot butter till a nice light brown. Fried eggplant is more delicious with fried tomatoes and fried rings of onion. Peel eggplants and boil in salted water. Chop onions and fry in butter. Add cut-up tomatoes or paste and enough water to make I pint of liquid. When tomatoes are soft strain the mixture and add salt & pepper to taste. Cut the eggplants in slices and arrange in layers in a greased casserole. Cover with the sauce and bake. Serve with mashed potatoes.

Bitterbal

The "bitter" refers to the accompanying drink, not the appetizer. These are mild, crustly little balls to be dipped in tangy mustard.

Make a thick white sauce of : 3 Tbs. butter ,3 Tbs. flour ,3/4 cup stock ,Add : 1 1/2 cups finely chopped, cooked meat (roast beef or veal, ham, chicken or shrimp) ,1 Tbs. parsley, minced ,salt and pepper to taste
Chill mixture and shape into balls one inch in diameter. Roll balls in: , fine cracker crumbs ,Then dip them in a mixture of: 1 egg, beaten ,2 Tbs. water ,Dip again in cracker crumbs. Fry the balls in deep, hot fat for one or two minutes, or until golden brown. Serve hot with mustard. Spear with toothpicks.
