Rice, beans and coconut milk

This is a traditional dish in Belize and in the entire Caribbean Basin. It came to these lands through Caribbean tribes hailing from Africa.

Rice and beans are cooked separately. The rice is cooked with the coconut milk. When both are ready, then they’re mixed and put to a slow burn until evaporation occurs. Pouring enough coconut milk for the sake of flavor is recommended. Add two to five bay leaves and thyme twigs. This dish can be combined with roast meat, broiled chicken or fish. The finishing touch is added with fried bananas or plantains.
