Sweet potato pie

Saint Vincent and the Grenadines is the world’s largest arrowroot producer. The roots of this plant are very useful for the obtainment of starch use for baking.

Six persons:1 Kg sweetpotatoes2 eggs50 g flour25 g butter50 g almondsvanilla (powder).
Cook the sweet potatoes in low fire. After that make a purée. Add the yolks, the flour, the almonds and mix them deeply. Add a pinch of vanilla and put in the oven in a butter greased mold. When the paste is brown you take it out the oven.
